Hit the `cue this summer with these plant-forward switches to try this summer. ☀️
1️⃣ Grill it! Blend in mushrooms or beans to your next burger. Consider grilling vegetables as a side, too!
🍔 Get inspired and try these: tofu, mushroom, and sesame burgers with kimchi or grilled masala spiced falafel burgers with cilantro chutney, raita, and grilled mango
2️⃣ Smoke it! Smoke vegetables to accompany your cook out — try sweet potatoes and whole heads of cabbage! (Just "beer can" the cabbage first!)
🍠 Our ideas? Try out smoked sweet potatoes with a lime tahini sauce or smoked whole "beer can" style spice-rubbed cabbage with a maple bacon vinaigrette.
3️⃣ Skewer it! Add some interest to your next kebab with the addition of plant-based proteins and unusual vegetables or fruits.

👃 Sense the ripeness. Use your senses (not just touch!) to determine whether something is ripe.

👃 Smelling fruits provide an indication of flavor and sweetness.
✋ Most fruits and vegetables should be firm with only a slight give to them.
👅 Be sure to taste if there are samples.
👂 Certain produce like melons and squash will have a hollow echo when ripe!

This summer spread is sure to refresh! Make sure you save this recipe for fava bean and fresh mint spread so you can come back to it later. 👀
Makes about 2 cups
INGREDIENTS
2 pounds fresh young fava beans
2 tablespoons lemon juice
1/4 – 1/3 cup olive oil
2 tablespoons chopped fresh mint, plus more for garnish
1/8 teaspoon salt
DIRECTIONS
Add beans to boiling water for 1-2 minutes until just softened. Drain and remove fava beans from the outer pod and then peel shell from each individual bean.
Pulse beans with lemon juice and add olive oil slowly until texture is smooth.
Blend in mint and salt until incorporated.
Serve with chopped local spring vegetables (radishes nicely complement the spread) or toasted bread and garnish with remaining mint sprigs.
